Yakiniku is a social style of cooking bite-size meats and vegetables over a communal charcoal flame or a gas/electric grill. It is one of the most popular dishes in Japan. Friends and families gather to cook meals of meats, seafood and vegetables which are then dipped into dipping sauces like this amazing Yakiniku BBQ sauce.
This yakiniku is made from a mixture of traditionally brewed soy sauce, rice vinegar, apple chunks, onions and sansho pepper, which highlights the contrast between the salty taste of soybeans, the sweetness of apples and the acidity of artisanal rice vinegar.
Founded by Shozaemon Shibanuma in 1688 in Tsuchiura, the company has specialized in soy sauces and seasonings for more than three hundred and twenty years, through eighteen family generations. The key to their exceptional products is the bacterial activity in the wooden barrels, combined with the artisanal manufacturing process using locally grown soybeans and wheat.
