Haizakura - Dark Soy Sauce
Japanese dark soy sauce is called Haizakura.
It is the ultimate all-purpose soy sauce. Unlike commercial soy sauce, this has been aged in Japanese cedar barrels for 2 years, giving it a reddish-brown colour with copper reflections, and floral aromas, with notes of black honey and caramelized sweet potato and a sweet-umami taste.
It is a wonderful replacement for the commercial soy sauce in your kitchen: ideal with sushi, marinating your vegetables and meat, as well as adding depth to your salad dressings.
