Hichifuku's organic shirodashi sauce is a blend of light soy sauce, triple-fermented and three-year-dried bonito (called "honkare bushi"), shitake mushrooms and kombu seaweed from Hokkaido. Located in Hekinan in Aichi prefecture, the Hichifuku brewery is the only Japanese company producing light soy sauce – shiroshoyu – certified organic.
Thanks to its powerful, smoky and umami-filled taste, only a few drops will be enough to unite the flavors of your favorite dishes. Use it as a finishing touch to stir-fry noodles, rice dishes, broths, eggs and braising juices for meats. Produced with nearly 90% wheat, the amber and light color of the soy sauce at the base of this blend also helps to keep the natural color of the food.
