I love stir fry, I love it so much that I cook it at least 2-3 times a week. Easy and delicious this dish can be quickly prepared for lunch, dinner or whenever you are craving stir fry.
The best part about stir fry is you can make it with just about anything. If you don't have the listed ingredients at home, get creative and substitute with whatever vegetables you have laying around in the fridge.
Same goes for the protein, I decided to use shrimp but you can use chicken, porc, beef or even tofu if you want to make this dish vegetarian.
As for toppings, you can stick to green onion and keep it simple or make it your own. I went with my favorite chili miso oil.

Ingredients

1 broccoli

2 carrots

5 shiitake mushrooms

5 cloves of garlic

3 green onions

20 large shrimp (31-40)

2 tablespoons dark soy sauce

2 teaspoons sesame oil

2 teaspoons corn starch
-
1/2 cup of water
-
1 tablespoon cooking oil (peanut,canola,vegetable,etc..)

Slice carrots and shiitake mushrooms
Cut florets off of broccoli
Chop up green onion and seperate white from green part
Mince garlic and separate in half
Sauce
In a bowl, add half of garlic and white part of green onions
Mix in soy sauce, sesame oil, cornstarch and water
Set aside
Blanching vegetables
In a wok or deep pan bring water to a boil and add carrots, broccoli and mushrooms
Cook for 3-5 minutes or until desired firmness
Once cooked, strain the vegetables and set aside
Stir fry
In a wok or deep pan on medium heat add your 1 tablespoon of cooking oil
Add shrimp and other half of garlic and cook for 2-3 minutes or until shrimp is pink and cooked through
Add vegetables to wok and mix well with shrimp
Add sauce and stir for 30 seconds to a minute or until sauce has thickened
Remove wok from heat and mix in green part of onions
Serving
Add your desired toppings and serve with rice or with other dishes
